Cayenne Pepper Thai Sauce

Ingredients
- 100ml water
- 100ml white vinegar
- 100 g caster sugar
- 10 cayenne peppers
- 1 small piece of fresh ginger
- 1 clove of garlic
- 10g cornstarch
- Salt
Preparation
- Wash the cayenne peppers and finely chop them
- Keep the seeds aside
- Peel the garlic clove and crush it in a mortar with a little salt until you get a paste
- Wash the ginger and grate it as finely as possible
- In a saucepan, bring the water to a boil and the vinegar
- Add the chilli, sugar, garlic, ginger and a pinch of salt and simmer for a good 5 minutes
- Dissolve the cornstarch in a tablespoon or two of cold water and add it to the sauce
- Cook for another 1 minute, then turn off the heat and let cool for 20 minutes
- This sauce is perfect for plain rice
