Cayenne Pepper Thai Sauce

Ingredients

  • 100ml water
  • 100ml white vinegar
  • 100 g caster sugar
  • 10 cayenne peppers
  • 1 small piece of fresh ginger
  • 1 clove of garlic
  • 10g cornstarch
  • Salt

Preparation

  • Wash the cayenne peppers and finely chop them
  • Keep the seeds aside
  • Peel the garlic clove and crush it in a mortar with a little salt until you get a paste
  • Wash the ginger and grate it as finely as possible
  • In a saucepan, bring the water to a boil and the vinegar
  • Add the chilli, sugar, garlic, ginger and a pinch of salt and simmer for a good 5 minutes
  • Dissolve the cornstarch in a tablespoon or two of cold water and add it to the sauce
  • Cook for another 1 minute, then turn off the heat and let cool for 20 minutes
  • This sauce is perfect for plain rice
